I rarely post on (though still regularly read) LJ anymore because I've not had much worth sharing as of late, but as most of what I post on Facebook gets missed, and I think this is so important, I'm sharing it here as well:

I don't know how I feel about the idea of giving up wheat products completely (I like my pasta too much, although I do seem to be eating less bread than I used to); what made the biggest impression on me with the article (besides its sheer length) is finding out that they've genetically altered wheat so much that it's not even the same thing that was being eaten 50 years ago. I mean what the hell! It was good enough for thousands of years - why fuck with it? Oh, right - "because we can."

At any rate, I'd love to see you on here more often. I miss seeing all y'all on here - that's so 2004, I know. :)

Yeah, that really surprised me as well, though as was mentioned in another review, initially, they did it with the good intention of making more food readily available to more people. But we know which road is paved with good intentions, and unfortunately, they never bothered testing it. Though it really doesn't matter all that much, because as the author mentioned in an interview, even if we were able to go back to the old kind of wheat, two slices of whole-grain wheat bread boosts blood sugar more than a candy bar, which in itself causes plenty of health issues: "Even a modest amount of carbohydrate exposure is enough to raise blood sugar, induce physical fat accumulation, initiate inflammatory processes, and cause high blood pressure in genetically susceptible people. So I'm hesitant to say that 'old' wheat is a perfect solution ( ... )

Anyway, I appreciate you reading and commenting, particularly as - like my comment :)~ - it was so long (though that was part of the appeal to me, how comprehensive the info was in the review alone); as you can tell by how I go on, LOL, I'm really passionate about this stuff, so it means a lot for you to have actually read it, especially as you're only one of two or three who actually ever does (or at least has acknowledged having done so, anyway). I just know, from personal experience as well as extensive reading, how much what we eat affects our bodies in so many ways. And having learned how bass-ackwards the conventional wisdom on healthy eating is, I've sort of made it my mission to help spread the word to as many people as I can, because it sickens me knowing that people are going out of their way to eat in ways they think are healthy - that they often don't even enjoy - and are still staying sick and/or fat, or worse, getting sicker and/or fatter because of it. :\
