that sucks. i made some totally abysmal gluten-free anzac biscuits the other day because my housemate is gluten-free [i was doing up so many batches, no wheat for one housematey, no nuts for another, all vegan for me haha] & used chick-pea flour & OH MY GOD, they were hideous. the flour doesn't taste like chick-peas even, just weird punch-in-the-face biteyness that no amount of cinnamon + golden syrup could disguise.

At least you didn't try to make one batch that was wheat free, nut free, and vegan.... it can be done but oh so much more difficult!

I've only made one batch of gluten free cookies so far, they were chocolate chip and used buckwheat and rice flour I think, but they were mostly susgar and butter and came out VERY sweet. Strangely, they were less sweet (and much nicer) when I cooked big thick ones (in a mini muffing pan) rather than thin ones on a baking sheet.

Haven't tried chick-pea flour, but some gf flours do have flavours that need something quite mighty to disguise them....
