I think River is anticipating "Ariel"--which she thinks is a treat for Simon because he forgot how to be a surgeon when he was stuck in Serenity.
BTW, I think that Mal really hits the height of hypocrisy when he has the nerve to complain that River couldn't be bothered with the cows before, considering how mean he was to Simon about the prospect of her causing a stampede merely by breathing too loud.

I'm not sure I understand what you mean about Mal. On board, she wasn't thinking of the cows and wasn't concerned with them at all - and I thought he did have a point about a stampede in an enclosed place. He was doing his "my-ship-I'm-in-charge" routine, that's all. On the planet, I think he wasn't complaining so much as making an observation. Just my take on it though.
More like I conflate the two in weird times and assume Simon Tam's high school experience = Zac's role in High School Musical. I mean, we know Simon's burst into song on at least on occasion...
ah! I have never watched High School musical, so I didn't get the connection. But, yes, Simon has been known to break into song and climb statues and such. ;)
