Stuffed Mushrooms
4 field mushrooms, wiped with stalks removed and chopped
1 clove garlic
3 slices soy bacon, chopped small
about 400g cooked soy beans
roughly 1 tbsp ripped basil leaves
sundried tomato pesto
balsamic vinegar
spread the inside of the mushroom caps with 1tsp pesto each. heat under the griller approx 10mins or til softened.
heat a tiny amount of oil in a pan. add garlic and heat. then add the soy bacon, soy beans, mushroom stems, and basil, stir 5 mins.
spoon soy bean mixture into mushroom cap, drizzle with balsamic vinegar and serve. YUM
