Crispy Duckless Pancakes

1 tbs soy sauce
1 tbs blackstrap molasses
2 tbs avocado oil
250g mock duck
1 onion, finely chopped
6 mushrooms, sliced
12 rice pancakes
2 tbs sesame seeds
1 cucumber, sliced into short lengths
6 spring onions, sliced into lengths
1 lime, quartered
6 tbs vegan oyster sauce

Oil a baking sheet. preheat oven to 180C (350F).
Mix soy, molasses and oil in bowl, then add mock duck, onion, mushrooms. Stir thoroughly to coat.

Place a thin layer of mock duck mixture on the prepared baking sheet and bake 20-25mins til crispy.

Heat rice pancakes according to packet instructions

Place mock duck, sesame seeds, cucumber, spring onions, lime and oyster sauce in separate serving bowls

At the table, spread a teaspoon oyster sauce on warm pancake. Top with a spoonful of mock duck. a few sticks of cucumber, a spoonful spring onion, a sprinkling of sesame seeds, and a squeeze of lime.
Roll and eat!
