1/2-1 head of cauliflower, cut into florets
2 biggish potatoes, cubed
1/2 red capsicum, cubed
2 cans crushed tomatoes
1tbsp oil
2 tsp cumin seeds
3-4 tsps turmeric
1 tsp coriander
2 tsp garam masala
1/2 tsp salt
1 long red chilli
1/2 tbsp (?) grated ginger
Heat oil in large pan. Add cumin seeds. Fry for a minute or two. Add turmeric, coriander and salt. Stir. Add chilli and ginger. Stir for a minute or so.
Add tomatoes and mix.
Add the cauliflower and potatoes. Coat in the sauce. Cover and let simmer approx 20mins til potatoes are soft. (May need to add up to 1/2 cup of water to the sauce).
At about the 10minute mark, add capsicum.
When the potatoes are almost done, chuck in the garam masala, stir through. Simmer til potatoes are just right.
Meanwhile in another pot, heat some oil. Add cardamon pods and stir til they're puffed and fragrant. Add your rice and water nd go from there.
Serve the aloo ghobi with the cardomon-infused rice.
This would also go well with some fresh coriander added in, but we apparently don't have any in the garden.
