Having an arcade cabinet has been my dream for years too, though recently (within the last couple months), the dream has been kinda modified. I still want an arcade cabinet, but now I want it to have the following:

The monitor would have coax, composite, and component inputs.

The bottom half of the cabinet could be opened up and would have shelving for video game consoles.

The controls I'd want Sanwa buttons and controllers with quick disconnects wired to a terminal strip (if I'm understanding the guide I read right).
I would wire that to either the Street Fighter 4 Fight Sticks for 360 and PS3 if I get a PS3, or terminal strips wired to Nes, Snes, TG16, Turbo Duo, etc controller pcb boards

I'd probably have a surge protector/power strip in there to power everything.

It would probably take a bit of work every time I'd want to change systems, but it could be worth it. Of course I'm not even sure if something like that would be possible. I'll be curious to see how you did your Mame cabinet.
