Sounds like time for baba ganoush or an eggplant frittata w/"flat bread" on the side. No idea what to do with the Knock-wurst.

i do not know a recipe . but maybe you could grill one of the knock wrust and an eggplant and flavor them with some basil and flak seed .

or maybe make an eggplant and knock worst pizza and add some basil to it .
