Thanksgiving Pies: Done!

I just finished baking for tomorrow: pumpkin (actually butternut squash), pecan (actually walnut and pinenut), and double-crust apple. I'll also assemble the banoffee pie in the morning, but the filling is made, so that's just a matter of pouring everything together. Wow - I can't believe how early I finished :) The house smells glorious

Those sound wonderful! I love it when someone adapts a classic and gives it a bit of a twist like that.

Yes, it's funny - about three years ago I was making pecan pie for Thanksgiving and I let the pecans roast for too long (I pre-roast the nuts before stirring them into the filling to give a more rounded taste) until they were beyond burned, and we didn't have any more. So to salvage the pie I ended up using whatever nuts were around - which happened to be walnuts and pinenuts - and people loved it. So it's become a tradition now.

My mouth waters every time I read one of your cooking/baking posts. The walnut/pine-nut pie, in particular, sounds amazing. I'm in charge of the squash and stuffing, so I'm doing a squash-apple casserole for the former and two simple types of the latter, one with and one without mushrooms, since my mother hates 'shrooms.

OMG I have a renewed love for stuffing - we'll have to exchange recipes (although I don't like mushrooms either).

My stuffing recipe is very, very easy and involves Arnold brand herb-seasoned croutons, so it's probably not up to snuff for you, you gourmand! :-) Still, I adore it and can hardly wait to snarf down the leftovers while watching 12 hours of extended version DVDs of LotR, which is my annual Black Friday tradition. It's my own little rebellion against consumerism and greed at the holidays. *grins*

Ah ha! When I catch up with LJ posts (I owe a backlog of around 8 months of posts) I'll put up the apple-sausage-fennel-cornbread stuffing that has me totally obsessed lately.

Your LotR tradition is awesome :) I've always meant to watch them back-to-back but never had a good time/venue.
