Help me be less of a kitchen virgin!

So as a new wife, I am making an effort to cook at least a few nights a week. Nothing elaborate, just simple meatless dinners. My dilema is that I am running out of ideas. I really like anything I can cook in one dish like casseroles or anything in a skillet. I will cook chicken but no red meat, fish, etc. I've pretty much tried all of the recipies ( Read more... )

Ok, here's one that my whole family loves.

Impossibly Easy BLT Pie

12 slices bacon, crisply cooked, crumbled ( I use turkey bacon)
1 cup shredded Swiss cheese (4 oz)
1/2 cup Original Bisquick® mix
1/3 cup mayonnaise or salad dressing ( I use miracle whip lite)
3/4 cup milk ( I use 1%)
1/8 teaspoon pepper
2 eggs
2 tablespoons mayonnaise or salad dressing (same as above)
1 cup shredded lettuce
6 thin slices tomato

1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer bacon and cheese in pie plate.
2. In medium bowl, stir Bisquick mix, 1/3 cup mayonnaise, the milk, pepper and eggs with wire whisk until blended. Pour into pie plate.
3. Bake 25 to 30 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving. Spread 2 tablespoons mayonnaise over top of pie. Sprinkle with lettuce. Place tomato slices on lettuce.

I forgot to mention that I have switched up cheeses before too! I have used cheddar, mozzarella, provolone and pepperjack.

Ranch chicken salad
Spinach salad
Rolls

What you'll need for the ranch chicken pasta salad:
  • Perdue Short Cuts grilled chicken strips (usually found close to where the hot dogs or package lunch meat)
  • Kraft Pasta Salad: Classic Ranch

    You can make this pasta salad right in the microwave! Cool it off completely in the fridge, then add about half the package of chicken (cut up into chunks).

    For the spinach salad, I make a traditional tossed salad using spinach for extra vitamins and color. I add two different kinds of cheese (I pick my favorites), and lots of other veggies. I put out three kinds of dressing and hard boiled eggs (sometimes I dice them up, sometimes I leave them as they are).

    I make a different kind of roll each time I make this meal because I can't figure out which I like the best. So far, galic toast has been a really good compliment.

    thank you so much! I have to admit that I love those perdue short cuts (even though it they don't happen to be on sale, they can get quite expensive!). I think they are great for people like me who are lazy and/or inexperenced in the kitchen. I will definitely try out your recipies and let you know how it goes.

    I agree, they can get quite pricey - I buy a package every couple of weeks or so because, like you, they're perfect for how I don't like preparing them myself. LOL

    I suck in the kitchen most of the time. I actually had to go to counseling one time because I thought I was a horrible wife, because I couldn't cook. LOL

    Don't drive yourself crazy over it, unless you really enjoy being the kitchen. I thought that since I was married it was my responsibility to be Martha Stewart, but had to let go of all that, drove me crazy.

    I widh I had a recipe I could give you..... I do have a quiche recipe that is jamming. My Martha Stewarty friend Yamilka gave it to me. Do you drink/eat dairy? Cream, cheese etc.....
