First CSA "box"

We got to pick up our first CSA share yesterday. It's a small farm that sold 12 shares this year. We got chard, arugula, lettuce, potatoes (about 6 servings), basil and a small bunch of assorted herbs. They said that later in the summer, the haul would be much larger.

Larger?

See, I've been looking into CSAs around here. All of them provide shares that would drown us out of house and home -- we just don't consume that much.

How do you manage?

1 main dish salad, 1 lunch salad, sauted the arugula & chard for a side dish (decided we like them better in salad) and 2 meals with potatoes.

It's going to get harder after next week - I just got my post-surgery diet yesterday and for 6 weeks after surgery, no raw vegetables, no fruit.
