I just got my first iphone a couple days ago, and I love it- except for one thing. Like you, I'm having a lot of trouble seeing some of the apps, like Facebook. I have no idea what to do about it, other than try to work with the zoom, which is awkward. I wish I had an answer for you, but wanted to let you know that you're not alone in your frustration. I'm more sighted than not, but the teeny tiny type is a problem for me. I fave myself a headache yesterday trying to read Facebook. Not sure what the answer is. Hope for a software upgrade I guess?

I am not blind but I teach ipad use to low vision and blind users and have helped with iPhones too. I am not an expert but my suggestion would be to try and use zoom and voice over together when you really struggle. I understand you have vision but you can set it up to just turn voice over on if you need it not all the time. Zoom is good but the three finger thing can be tricky especially on the iPhone so I do understand that. I will try and test some things and see if I can figure any tips.
