Chili and frittatas take meat substitute pretty well.

You can freeze the herbs, too, for use later on.

We have never been able to truly keep up with a farm share, sadly.

Hrm, I hadn't thought about that. I assumed that basil wouldn't freeze well, and I so rarely use whole leaves in things that it sounds like too much trouble. But pureeing and then freezing in cubes might be worth it for some of it.

I love the idea of the farm share. I like the fresh foods that I wouldn't normally buy at all, and I love the new tastes i've discovered and I love supporting local business. But it really requires dedication to preparing a variety of foods on a regular basis, and that's hard enough.

Its not something I've done a lot, but, my understanding is that it works pretty well. People do different things; teaspoons of pureed basil in an ice cube tray seems like it would be useful. (You can pop them out and put them in another container to avoid freezer burn.)

We are in accord with the farm share. =)

Everything you (plural) have said about the farm share. It's awesome to get a mix of fresh veggies every week but I find it is impossible to use them all. At least I have good feed stock for my compost heap. ::sigh::

Fresh basil is great in salads (not just caprese).
Also great chopped in pasta sauce of any kind.

True. Another leftover food I didn't mention above was the GINORMOUS bowl of baby salad greens, which means salad for dinner every night until it goes bad. Basil will be added!

That salad looks really good, although I might use ricotta as I like it 10x more than cottage cheese. I have radishes on the porch railing, I should see if any more of them are grown enough to bring in before tonight's freeze. I second the meat substitute for chili, also stews - would go well with barley I bet.

Excellent idea, except that in my everyday cooking, I have to cater to carnivores, who eschew all meat substitutes. :-P

So this'll be a dish for either just me or me + friends.
