Would it be wrong (albeit optimistic) to assume that if a teacher does not specify a preference over double or single spacing in a lengthy essay, that they would accept double spacing?

Usually, double spacing is the standard because there's room in between the lines for comments and corrections.

many profs find single spacing hard to read and will only accept double spacing, if they don't specify I'd always go double spaced. If single, I use large font, but some profs get pissed when you do that so must be careful.
