Here's an official recipe: Tzatziki - 1 Portion 2 cups plain GREEK yoghurt {or plain regular}, strained 2 large cucumbers 1 tablespoon finely chopped garlic 1 tablespoon white vinegar 1-tablespoon olive oil 1/4 tablespoon of salt 1/4 tablespoon of pepper
Peel & grate cucumber, add to bowl, add salt, let sit for 10 minutes - it will bring out excess water and make it easy to drain fluid. Drain and add vinegar, olive oil, garlic, salt and pepper to taste. Add strained yoghurt, mix well. {To strain your own yoghurt: Put in a thick papertowel, cheesecloth or coffee filter & place in strainer. Refrigerate for an hour or two, then do as above. Garlic powder can be used instead of fresh garlic, if needed.

That said... I like to improvise. My own tzaziki involves strained yogurt, sour cream, cucumber, garlic, dill, lemon juice, salt and pepper, olive oil... and a supersecret ingredient that's totally unauthentic: A dash of curry. :)
