Hope you enjoyed that video of Monty I put up. It makes me smile every time I watch it:))
Thank goodness that energy slows down as they grow. Lately he's taken to sleeping on the floor, under a hutch, by the heating vent in the living room. We have hardwood floors and next to the air vent, they get really warm so Monty stretches out in a heat induced trance and then falls asleep. Sounds good to me:)

I'm feeling sort of crappy today. Tired and out of sorts. Did not sleep well at all so I am hoping I can fit in some quiet time today. Just finished this painting. Different but the same if you know what I mean:) I have an idea for a painting featuring rainboots so I might try to tackle that this afternoon.

Brr it's cold outside. Really cold these past couple of days but I hear it's warming. Yay.
The cold makes me shrink into myself and not want to do anything. Only 58 days until Spring!!!

Now I am headed to the kitchen to heat some Sweet Potato Salsa soup for lunch. Really yummy. I didn't have any regular salsa when making it the other day so used some mango/lime salsa I had. Delish! It was a recipe from the President's Choice website, simple and easy. I used my favourite kitchen tool to blend it, a hand blenderizer by Braun. Soooo much easier than pouring it into a cuisinart or blender. Just pop the thing into the pot, whiz it around and presto, gourmet soup. Here's the recipe.

Low Fat Sweet Potato Salsa Soup

2 Tbsp olive oil
2 onions, chopped
3 cloves of garlic , minced
3 large sweet potatoes, (about 2lb/1kg) cubed
6 cups chicken stock (I use a box of the Presidents Choice organic chicken broth and add h2o)
salt pepper to taste
1 cup salsa ( mild or medium) (I only had mango/lime salsa and it was great)
2 Tbsp lime juice

2 cups croutons This is for garnish and only if desired, I didn't have any and it was fine.
1/4 cup coriander

In big pot, saute onion for about 5-10 minutes until soft, add the garlic about 3/4 way through.
Add stock, potatoes, s+p, and boil, then simmer until potatoes soft about 20 minutes. Remove from heat, add salsa and then puree. YUM!

Add lime juice at the end. I used lemon cause I did not have lime. Garnish with crutons and coriander if desired.
