Cream of Split and Fresh Pea Soup with Rosemary and Lemon

Well, I'm sick again, which means it's soup-making time. Which means another gem from Vegetable Soups from Deborah Madison's Kitchen.  The only hassle here is soaking the split peas.  Otherwise, it's a total winner.

1 c. green split peas, soaked for two hours
3 T. olive oil
1 large onion, diced
2 carrots, diced
2 celery ribs, diced
2 T. rosemary

I never understand the pureeing of soup--I always skip that step in any recipe.

I puree some soups--thus my immersion blender--but never all of it. I like at least a hint of rustic.

I wish J, who loves peas, liked split pea soup, which I adore. Maybe I will make him try *good* split pea soup...

This might be the soup to lure him to the pea green side. I'm eating the leftovers as I write this, and I can taste more of the lemon. Maybe one is enough after all. In any case, delicious.

Thanks! I do feel a little better. I had to teach today, and it wasn't SO bad. I think a hot toddy might do the trick . . .
