Glorious Fall

It is a glorous fall day here in upstate NY, and the colours are just divine. It was clod enough last night to have a hard frost, and the grass was covered with it this morning. The Big Guy was just talking to me about the leaves in Vermont about now. I only took him back there once in the fall (for my mom's funeral) and he quickly fell in love with the leaves (and out of love with the cold).

We were lovely here as well. No frost yet, but the nights are getting cool and the days are just perfect. This is so my favorite time of year.

So how do you make your butternut squash/pumpkin soup? Do you roast them off first? That's what we do.

I have roasted them first or used chicken broth to steam them first also. This time I didn't peel and cut a pumpkin I used a can. then I put in onion, garlic, apples, salt, pepper, ginger, nutmeg and cinnamon. Let it get really soft and mash it to a pulp. Add heavy cream and stirr. Yummy
