I doubt you'll find much as real estate is to valuable to let a large industrial site be vacant for too long.
But how about White Bay power station (I think closed to the public for safety reasons) or Cockatoo Island (less than derelict but industrial history nonetheless)? Have you tried historical societies like the National Trust and Royal Australian Historical Society? http://www.rahs.org.au/

The only two I can think of off the top of my head are the Carlton Brewery site on Broadway and that building wot I do not know the name of which you pass when you get onto Anzac Bridge from the city. But you prolly know of those two anyway and is that what you mean by industrial ruin?
Also ... *puts hand up for a copy of that list too, it would be so good for my novel!*
