For 2000 years in the past the most useful skill would probably be beekeeping. Before the discovery of bee space (a gap of just the right size for making artificial hives) the hive had to be killed to harvest the honey. With knowledge of bee space and modular wooden hives you could start a small business, then expand.
Remember, humans all over the world have always craved sweets. The ancient Romans were so hungry for sweetener that they'd use _sapa_ (boiled down wine containing lots of lead acetate, AKA sugar of lead) as a sweetener.
