I always eat the skin on delicata squash, but have no idea whether or not you're really supposed to. What I figure is that if the skin gets soft enough to chew during baking, it's probably edible!

Delicata is one of my favorite squashes. I eat the skin but I also cook it in a far more lazy way. Slice it the long way into two pieces. rub olive oil and salt on the exposed side. bake it face down on foil until it's done.

yours sounds like a very nice dinner =)

I did my weekly lentil thing today. Tastes yummy (to us) but looks like dogfood =(
