I am taking part in the quickfire cherry pie cookoff challenge - I have to bake on Sunday and take a cherry pie on Monday

do any of you have a surefire recipe or site you recommend for these traditional type things?

What are you visualizing for your pie? What comes to your mind? A chilled cherry cream pie? A classic Yankee fruit pie?

oooo

well - we all got a bit excited and started thinking outside of traditional for a while. However now that the madness (beef and black cherry pie!) has passed I think that I would like to make a classic yankee fruit pie (I think).

Or a black cherry baked cheesecake.

Hmmmm. I love the aesthetic of the lattice of pastry with icing sugar on top but am lazy and slightly inept with things like lattice and shaking of sugar. So I am thinking I need to go with depth of flavour.

And it will have to be a cold pie.

I'll send you my butter crust recipe tonight for a classic 'merican-style flaky crust. Do you have a food processor/pastry cutter? Makes it so much saner. Also, do you have a deep pie plate?

A beef and black cherry pie sounds pretty tasty!
