We've been trying to eat healthier lately, so I bought Moosewood's Low-Fat Favorites cookbook. Tonight I tried out my first two recipes: Bean and Bean Gumbo and the Almost Fat-Free Cornbread.
It was really yummy! I thought of you when I made it. Definitely something you and Ali would both eat (and not miss the meat). I cheated a bit and used Rotel w/ chiles instead of fresh stuff, but I don't think you could tell. I would add the parsley at the end sparingly. I think garbanzo beans would also make a nice addition. Also, it makes a LOT so you need a larger than normal pot.
Aw, we loooove the bowls. But that's fine. I actually found a pattern from Denby that matches your bowls (even the first one you made) so we're pretty stoked about it. :)
I have a ton of Moosewood Cookbooks! Mostly they just look pretty on my bookshelf since I'm the laziest cook on the planet. But whenever I use them, they are not a disappointment.
Yeah, actually it was hanging out with you and your sis over Christmas that got me thinking about buying this book. My old roommate Claire (remember her?) swore by Moosewood and Katzen, and I was curious if they had a low-fat version. Sure nuff, there it was! :)
