Destressing dinner

Karly is organizing a conference and it kicks off tomorrow. To help her relax before it all, I offered to cook a fancy meal. Here's the menu:
  • (Starter) Roast tomato and mint soup
  • (Mains) Pan-fried chicken with a polenta crust, roast maple pumpkin slices and a potato-and-sweetcorn mash.

Roast tomato and mint soup
2.5 kgs of tomatoes
500mL chicken or vegetable stock
3 tblsp of finely chopped oregano
Olive oil
Salt
Cracked pepper
A handful of roughly-cut mint leaves (not dried)

  1. Preheat oven to 180C
  2. Halve the tomatoes and place them cut side up on a tray with baking paper on it.
  3. Sprinkle oregano, salt and cracked pepper over the tomato halves. Lightly drizzle with olive oil.
  4. Roast for 30 mins
  5. Put roasted tomatoes into food processor and blend until smooth.
