CSA, week three

does anybody have any good beet recipes? I never ate them growing up and have only have them a handful of times.

more about my CSA so far when I have time to write this weekend.

p.s. I have the internet at home now. delightful!

the absolute best thing we've made with our csa beets was carrot-beet pancakes (like latkes, that is, not pancake pancakes!) recipe
here. so good! but lots of grating.

we also made beet risotto, which was less of a winner but kind of exciting -- this recipe.

beets roasted with orange juice are also pretty yummy -- i don't remember what recipe i used but probably close to this one.

also we made some veggie burgers that i loved, with beets and carrots and sunflower seeds and sesame seeds and i don't know what else. again lots of grating. recipe was from farmer john but i'll type it up if you're interested.

There're a million borscht recipes you can try, but I grew up with a Russian Jewish grandmother, so I'm particular to cold borscht. You dice three or four beets and a small onion, and boil them in an equivalent amount of water (around four or five cups) with the juice of one lemon, a pinch of salt and a dash of white pepper. Let that simmer for 45 minutes, then blend until smooth and chill. Once it's cold, add salt and white pepper to taste and garnish with some dill and sour cream.

I'll also second the beets roasted with orange juice, which I'll toss on salads in lieu of dressing.
