Nearly Wild Rabbits

Have you even seen those sickly pale fleshed domestic rabbits!?

I don't like them! I don't like the looks, the lack of flavour, not even the smell when they're cooking! So, I wanted something better!

I miss the days when we could snare, hunt, and get Wild Rabbits. The darker, reddish-coloured flesh, the succulent taste, and the wonderful smell while cooking all add to the deliciousness of the Wild Rabbit, or Snowshoe Hare.

So, my happy accidental discovery, happened when we began raising pastured rabbits. They eat mainly grass and pasture forage, and we first wondered if they'd even get enough nutrition to survive. We actually keep them in wire cages, the cages with the rabbits in them get moved daily. So they're always getting a fresh salad bar to eat! Yet, we weren't sure at first they'd get enough grass and browse through the bottom wire of their cages. It wasn't till we actually harvested some of them last year that we got a pleasant surprise! They were a darker colour, more like Wild Rabbit. They had a good amount of fat, so we knew they were getting lots to eat! It made me feel good to know that we were raising really healthy rabbits! Perhaps the best part was the taste! We had discovered how to grow what we now call, Nearly Wild Rabbits!
