Red Pepper Request

Red peppers have gone on sale in my grocery store! $1/ea, which is unheard of in this area. So, what good recipes does anyone have that's cheap yet elegant involving red peppers? I'm thinking they may be going into my Valentine's Day dinner :3  so points for something pretty or romantic-ish.  Must be vegetarian.

I haven't tried this per se, but I've done something close to it. Stir-fry is always good with peppers. You can do tofu instead of meat.
