tofu scrambler and taters! my fave :)
non-meat sausage would round it out.

sounds like you're doing pretty good though! that's awesome. and the foods look yummy.

It took a while for Jeremie to like it, he loves Miracle Whip... and it lacks that zing that MW has. But he loves it now too :)

I meant to ask you for the recipes for those tasty mashed potatoes and kale and the sloppy joe stuff. I talked about that meal for days.

I'm glad your feeling good. I think when everything settles around here I'm going to do a little reevaluatin' of our diet. It's pretty good as diets go, but there is always room to improve.

The recipes I made for you, and some of my other favorites, have all been from the same book - "How it all Vegan". I have gotten a few books, but I keep going back to this one! I can send you the recipes, but I would suggest picking up the book, there is lots of good stuff in it.

your cooking looks amazing! i am very impressed with the vegan thing. for some reason...we find it really hard to do, eventhough a lot of my friends are vegan and we are veggie. but seeing your food...is inspiring! i think james and i should try it for a week of something. its just milk in coffee and cheese for me. but hearing you talk about not having coffee is inspiring. coffee is such a big deal sometimes. but it shouldn't be! hope you are doing well!

If you told me 3 months ago that I would give up cheese and coffee I would never have believed it! Clay and I love both, we have 3 different methods for brewing coffee and if I didn't have it in the morning I was unable to function! Really though it wasn't as hard as I thought, I missed the coffee for a few weeks, but now that my detox is over I could have it again, I just haven't needed it. Tea is quite lovely. And as far as food goes, the stuff we have been eating is so satifying and tasty. I think the key has been that I have read a few books to educate myself on the health and environmental benefits, and purchased some great cookbooks. It a whole new way to cook, and I didn't know how. So glad you are back in the mix, and I am glad you are so happy with your recent move!
