So most of this is actually completely useless for my purposes (especially considering that Jiang Wei doesn't start showing up until the very end), but I enjoy collecting useless information, so: all of the dialogue you can get by talking to people around the camp in Shu story mode. Other modes will probably be forthcoming later, because I'm a dork like that.
I've tried to preserve formatting (namely, the wonky text colors), but there is one thing I did add -- the green dialogue tag on anything said by Shu Guy, the true hero of the three kingdoms. :V
(Incidentally, if you ever find yourself having trouble answering the scholar's questions in conquest mode: talk to people in story mode. Seriously. Half of the shit they say is random trivia that doesn't come up in the game proper, but that appears in the scholar's quizzes!)
Yellow Turban Rebellion (Liu Bei)
Peasant: They are attacking nearby villages like common thugs. But the Imperial Army refuses to help us.
It's simply unbearable. How long must we live in such despair?
Peasant: Look at the size of these guys. They're like giants!
Private: Speak to the person with the red mark above their head to begin the battle. Here, that person is Lord Guan Yu.
Peasant: If you hadn't helped us... We owe you our lives.
Liu Bei: No, I am simply relieved that you are all okay. Are any of you injured?
Peasant: We are all fine thanks to you. You are a true hero.
Peasant: If you're going on ahead, please be careful. The leader of the Yellow Turbans, Zhang Jiao, is around here somewhere.
Peasant: Who are you all? I've never seen you before.
Peasant: I'm thinking of volunteering! I want to get out of this town, and make a name for myself!
Don't forget me, my lord! I'll fight to keep you safe!
Peasant: I'm just glad we were able to get the women and children to safety.
Peasant: I just wish they'd let us get on with tilling our fields. At this rate, we'll starve!
Peasant: The Imperial Army is just a bunch of bullies. Can we really trust them to defeat the Yellow Turbans?

Zhang Fei: What's the big hurry?
It's not like they care anyway. We're simply volunteer soldiers. They probably aren't even missing us.
Liu Bei: No, he is right. We must hurry and catch up with everybody.
Zhang Fei: You're too serious! Well, at least I'll get to go out there and see some action!
Elimination of Dong Zhuo (Guan Yu)
Zhang Fei: Of course, it's all to help Brother make a name for himself! Any personal satisfaction I get is merely a bonus!
Guan Yu: Try not to get ahead of yourself. Our actions reflect on Brother, whether for better or for worse.
Zhang Fei: You think I don't know that? Man, you guys need to lighten up a little!
Zhang Fei: C'mon already! I can't stand waiting around here much longer!
Liu Bei: The people are suffering at the hands of Dong Zhuo. We must defeat him in order to save them!

Lieutenant: Lord Cao Cao will be a great hero one day. You'd do well to remember his name.
Cao Cao: Things are not finished just because we defeated Dong Zhuo. The chaos will continue until we can plant the lasting roots of peace.
(I assume a tense screw-up in the translation here, because...getting a little ahead of ourselves, aren't we, Mengde? :|a )
Private: Looks like Lord Zhang Fei's kept away from the drink. That's a relief.
Private: Those monsters burned my house to the ground. There's nothing I can do now but fight!
Private: Urgh... This is my first battle. I'm so nervous...
Private: Wow... Look at all these famous warriors! So, who are you?
Private: What's taking so long? Let's get started!
Lieutenant: Lord Liu Bei saved us! We are eternally grateful!
We were on the verge of death in this cold, with nothing to eat.

Battle of Xu Province (Zhang Fei)

Lieutenant: Yes, I'm sure he understands our lord's anger.
Peasant: My house... Now what am I supposed to do?
Zhang Fei: Look at this place... The bodies are just piling up on each other.
Guan Yu: It's as Lord Tao Qian said. Cao Cao's army is nearly invincible, and shows no mercy.
He kills every last one of his enemies. That is the only way he knows how to fight a battle.
Zhang Fei: This guy makes me sick... He's nothing like Brother.
Private: Lord Guan Yu is so calm. Or maybe he's just suppressing his rage...
Lieutenant: Cao Cao is truly heartless. To have wreaked such destruction in such a short time...
Private: They say Lord Liu Bei used to be a sandal salesman. That doesn't sound right...
Peasant: This well's useless now...
Peasant: You want water? Sorry, it's all dried up.
Peasant: Argh! Please... Just leave me alone!

Then we simply need to finish off Lu Bu once he's exhausted his troops.

However, we have no time to waste. We must begin the attack.
Battle of Guandu (Zhao Yun)
Liu Bei: Zhao Yun, I am pleased that you have come to join us.
However, because of me, Guan Yu is missing...
Zhao Yun: You need not say anything more, my lord.
Lord Guan Yu will return to your side in time. You simply need to be patient.
Liu Bei: You're right. Please forgive my moment of weakness.
Zhang Fei: This doesn't bode well... It really has got Brother down.
Urgh... I feel like smashing something!
Private: My lord, my lord! Remember me? My friend wrote back to me!
Uh, yeah... She said something about just being friends...

Xu Shu: I will get to that eventually. But first, we must defeat Cao Cao.
Zhang Fei: Well, that goes without saying. But why are you the one giving the orders?
Xu Shu: I harbor no ill will towards Lord Liu Bei. I simply am asking you to trust me.
Zhao Yun: Xu Shu is a talented strategist. He is certain to assist our lord's efforts.
Zhang Fei: Hmm... I wonder...
Private: My lord, it's me! I've been promoted to captain!
And have you met my wife? She's just over here!

However, this is a necessary step for Father to unite the land. And by doing so, create a world of virtue.
Liu Feng: For Father, and for the people, I must do what I can to help.
Private: I feel sorry for Liu Feng. They bring him in, and now he's not needed.
Private: If anything, he's in the way. I just hope he watches his back.

Private: I hear you are skilled with all weapons, not just the bow. I'd love to see you fight with something really unique!

If we can win this battle, then we will be that much closer to uniting the land.

Battle of Fan Castle (Guan Yu)

Guard: Four, I think. Guan Ping, Guan Xing, Guan Suo and... Guan something.
