It may make you feel better to know that, in the book at least, it's spelled "daemon", which has among its meanings "a person's attendant spirit."
the characters at the end LITERALLY plot out the sequals.
Except it's not how the sequels go at all.
Interestingly, they ended the film about three or so chapters before the end of the book. Where the book ends is a better ending if you know there are more books coming. I won't spoil it, but I felt a much bigger bombshell was dropped. However, if you aren't sure that there will be enough interest for another movie, where the movie ended is probably better.
One thing that really impressed me: the actress playing Lyra (who has no prior acting experience). Did you notice that when Lyra was being manipulative, she used the same facial expressions and body language as Mrs. Coulter?

That's how the British pronounce of "daemon". It was pronounced the exact same way in the audiobooks. Side note: listening to the audiobooks instead of reading them had me thinking it was "demon" also, and wondering why they used that term. But I just accepted it as part of the fantasy universe, just like they used "amberic" instead of "electric" and "chocolatl" instead of "chocolate".
Commerce or controversy on the part of the movie makers
If they'd wanted controversy, they wouldn't have toned down the religious references so much. Like the fact that cutting off the kids from their daemons was supposed to free them from original sin.
Why ditch catholic
They didn't. The word "catholic" never appears in the book as far as I can remember. It's just called "the Magisterium" or "the Church".
but keep "demon"?Because if they didn't call them "demons" or "daemons", not a single fan of the books would have seen the film, except perhaps with a torch in their hand (instead, they saw the film ( ... )
