Has it become 'trendy and popular', or do we just notice it more 'cause we're in the age group of those who do it?
Anyway, pseudo-philosophical thinking aside, I've got a friend who's teaching in S. Korea right now, and she got in fairly easily. I don't think she applied until March/April if I recall. I've got another buddy who's teaching in Japan, I've gathered that's a harder market to break (and the cost of living is pretty high).
If you're seriously considering it, I can talk to the friend that's in Korea and get her to give me the link of employers, as there's several of them so you could keep your options open.
And remember: if they didn't need applicants, they wouldn't be at the fair!

Btw: I was at the job fair. The "teach english" booths there were all from "chain schools". I'd do a *lot* of research online about them. You have a very small tolerance for anything you perceive as bullshit and I have a feeling you wouldn't like being a shill. (the best jobs are the government-sponsored programs like JET for Japan, and I don't know what the Korean one is. But in any case, a real highschool is better than an "English Mill"). The reason the English mills are constantly recruiting is that their turnover rate is atrocious.

That link I provided you with via e-mail is from a gal who started this past May. It's pretty crazy to pack up and go right after you finish school (she missed convocation for example), but it may be a good way to get in ahead of the competition and it sure beats being stuck in another shitty summer job!
Anyway, as such I'd encourage you to start looking around reading week, as there's a few companies that get you to do some standardized tests and all that (don't know if that one's one of them, but my buddy who went to Japan had an array of interviews, tests, etc).
