This is the most important question of our time - can adamantium cut through mithril? We need a valid experiment. 8)

In the books, the mithril chain mail is slightly damaged by an especially vicious strike during the battle in Moria. (Specifically, a few links are broken.) Therefore, I maintain that adamantium could indeed cut through it.

That said, I would prefer the lightness and beauty of mithril to the weight and pain of adamantium applied to my skeleton, thanks. :)
