sauerkraut

I just started a batch of homemade sauerkraut based on this video. I've never really liked the stuff, but like many things perhaps the homemade is better than the store kind. But mostly I wanted to stuff an entire cabbage in a jar.

omg I LOVE saurkraut, I just bought some for my brautwurst today! I would totally make it but I'm way too lazy for such a process!!! Tell me it's deceptively easy?

Homemade sauerkraut is DEFINITELY better than the canned stuff. You know how different Zaidy's homemade pickles taste from the Vlasic in the jars? It's like that.

There's a German restaurant in Manitou Springs that makes their own sauerkraut with just the lightest touch of fermentation, and it's really, really good.

Their pickles are light and crisp, a lot less acidic and bitter than "normal" pickles.
