I gotta say, maybe it's for the best. I made some bathtub cheese once. Not Good. "No, it's not a veined cheese. That's from the ring." Ewww.

Why does the FDA hate Freedom? And as far as I can tell, no one making the regulations has any foodie sense at all :(

Some mold and bacteria is good (and essential for survival). Eradicating all of this stuff is detrimental. Anti- bacterial everything is just as bad as too much bacteria -- immune systems need something to work with.

I support reasonable health regulations, but it seems that too often the obsession with pasteurization is throwing out the baby with the bath water. And imported Epoisse just doesn't taste right :(
