I would cook the chicken first. I might also start with a layer of tortillas, then refried beans (or black beans and corn), then chicken, then salsa, then cheese. Rinse, lather, repeat. Serve with sour cream. Yum.

I'd cook the chicken first, but I'm paranoid about food poisoning and salmonella and whatnot.

Also, I'm sorry about the nasty dogs. Moose is always trying to pee on Lally's head when she stops to sniff things. Also, he ate cat poo today. Yay.

I know you decided against it, but if you ever decide to try it again...

I would cook the chicken first, then shred it. Possible cook it with some green chiles or something.

Put a layer of corn tortillas, then whole pinto beans, chicken, green chile enchilada sauce, and cheese... do maybe three or four layers.

top it with lettuce, tomato, onion, cheese, sour cream.
