Please forgive any missing D's in the post. The "D" key on my keyboard is touchy and unless i go back to add them with a deliberate key mash they don't go in.
This week has been both very busy and usless.
i had a meeting monday afternoon that was very disheartening. Lots of work an money spent by my client and the city still doesn't like the plan we have developed. The city keeps reversing courses. it is odd. So then tuesday i had Interior designers on my country club flying into town. We id a walk through of the phase that is uner construction and by the end of that I started feeling sick. I got home and had a slight fever (100.5) i went to bed right after dinner.
The next morning i felt pretty aweful, but the ID presentation to the club was happening and the last time I missed it they threw me under a bus, so I refused to miss it. esspecially since the Interior esigner tol me she was planning on bringing up how ba the lighting was (the club decied not to hire the lighting deisnger we recomended and then proceeded to not put in anyones contract the lighting design and infact reduced the contract amount for us an the engineers to eliminate the lighting design...) So i had to do it for free. then do it again becuase the interior designer didn't like what I ha done an now they are telling the client that it is still poorly one (which is riiculous at this point since this last round i did per thier specs.)
So i woke up with a fever of 101. Noel helped get the kids ready an i mae it through a full day of three meetings. i got home and went straight to bed. In the middle of the night my fever spiked up to 103.5 I got up to figure out if i shoul go to the hopsital...i took some advil, the temp went own a little and i went to sleep. My fever broke in the mile of the night but i still woke up feeling aweful. i went to the doctor who admonished me for not coming in earlier an told me I have brochitis. I am starting to feel much better after 2 days of antibiotics, nasal sprays and inhalers. Still can't see to stay awake past 7pm however...i guess 12-13 hours of sleep a night is what my body needs right now.
Now on to the lemons:
So I was given a bag of lemons an oranges without thier zest so i have been making a million lemon base dishes. Today i am finally feeling a bit better so I mae lemon muffins for breakfast. they were quite yummy.
Lemon muffin recipe
2c. flour (I use 1/2c soy flour, 1 1/2 c. white)
1/2c. sugar
2tsp. baking power
1tsp. baking soda
1/4 tsp. salt
1/4c. yogurt -------\
1/2c. apple sauce-----these three can be replace by 1c. yogurt
1/4c. oil ----------/
1 egg or 2 egg whites
1/3 c. lemon juice
zest of one lemon
2 tbsp sugar
preheat oven to 400F
mix the west ingredents and ad the dry an mix all together. add half of the lemon zest.
Spoon into paper lined muffin tins.
mix the 2 tbsp sugar with the remaining lemon zest and top each muffin with some of the sugar lemon mix.
Bake for 15-18 min.
these where delicious.
Other lemon things i have made have been
.
Skinless Chicken tighs and drumsticks dusted with salt, pepper, oregano, garlic and flour.
Seared in a big stew pot in olive oil until golden on both sides.
Then add 1 large can of diced tomatos, the juice of 1 lemon, some thyme, 1 sliced onion, 3 cloves sliced garlic, a good handful of crushed green olives, salt and pepper and 1/4 tsp. smoked paprika.
Let stew for 45min. add 1/4c. to 1/2c. evaporated milk an 2 tbsp sugar.
Serve over polenta or egg noodles.
I also made Nigella lawsons Lemon Linguine Recipe..yummy. I added peas to make it a bit more of a full meal.

Peanut suace is just a big spoonful of peanut butter, mixed with lemon juice, soy sauce, sugar, fresh crushed garlic, ans a sprinkle of cayenne.
Then mix with warm spagetti and green onions.
The lettuce wraps
1 pound groun beef
1 onion chopped
2 cloves garlic, chopped
2 carrots grated
2 tsp hoisin sauce
1/2 tsp soy suace
1/2 broccoli stems, peeled an diced
1 can water chestnuts
1 head lettuce for wrapping
brown the groun beef, add the onions, garlic, carrot, boccoli, and water chestnut. Once softened add the oy and hoisin sauce.
Serve with some peanut sauce in a lettuce leaf.
I also made Chicken scampi with lemon, galric parsely rice (rice with butter, garlic power, lemon zest and parsley)
It has been a delicious few weeks.
