Yesterday I baked pitta bread. 1kg flour produced 8 @100g and 10 @80g breads. They freeze well; an alternative to a loaf of bread.

These were made with a dough mix I use to make a wholemeal loaf. I think any standard mix will be OK. Make the bread as normal, but for the final stage, cut into small pieces (I use 100g). Roll into a ball between your hands. On a floured board roll (one direction to make oval shape) the ball to between 0.5 and 1cm thick. Heat over to 200C. Leave on floured board covered with a cloth for 30-45 minutes.

I have a "pizza stone" - place inside over before heating. When ready put pittas onto stone and bake for 10 minutes.
