Carrots with Mint and Spices
(serves 2 generously)

6 carrots, sliced
1-2 Tbs butter
4-ish sprigs mint, chopped
1/4 tsp salt - kosher or fancy sea salt
1/2 tsp coriander, crushed or ground
1/2 tsp ground cumin
1 tsp nice honey

Boil the carrots until done, then drain and put in a bowl.  While carrots are boiling, heat butter in a small pan.  When the butter foams, add all the other ingredients except honey.  Let them bubble together for ~2 minutes or until nice and fragrant, then pour over the drained carrots.  Drizzle honey over the top.

Delicious, rich, fresh, yum.
