Having a leg-up on graduate schools will mean better offers from them, which will be more money saved. It cannot hurt to do as much as you possibly can when opportunities like this arrise. It's free! Take advantage.
Besides, how much money could you possibly lose out on giving up a summer job?

It also concerns me that you may have to rush the application process, particularly the essay. This wouldn't be like writing an essay for a class that you can get away with just a mediocre job.
Get some English classes under your belt. Do one step at a time. Learn to walk before you run. Finish your undergraduate work before you take on graduate level courses.
With which academic advisor have you discussed the pros and cons of this decision? How would taking the extra classes affect any possible internship opportunities, which are probably much better "leg ups" in the business for contacts/experience than a paper certificate.

No one starts in publishing being a publisher, unless they break away and start their own imprint. Positions open up for editorial assistants when the previous editorial assistant gets promoted to associate editor, or gets a job with another company. When the time comes for you to move up, having (or working on getting) your Masters will be a plus. But before then, having anything more than a BA will probably just mean that you're not being paid what you're worth on paper ( ... )

I tend to pile too much on my plate. Don't overwhelm yourself.
