There was actually a deep, insanely thought-out reason for Mavis, to wit, turning into a bat wouldn't work because she can speak English perfectly well as a bat (and does so in canon). Turning into something random would freak her dad out to the point where he'd probably want to whisk her straight home to Transylvania and never let her out of the castle again.

Wolf, on the other hand, is a canonical Stoker thing that's not canonical for Hotel Transylvania, but is just familiar enough to Drac as a misconception humans have about vampires that he can sort of squint and wonder if it's not just some very rare symptom of vampire puberty that he's never run across before.
