subject is not displayed when viewed in my style (minimlaist blue), but is when viewed in yours.

Right now, I can only guess that "if ($subject)"-like construct is used in Perl code somewhere. I suggest you open a JIRA bug on it -- when it gets priority, I think we can get to the root cause pretty quick.

formatted_subject, I think... though I'm not sure why yours work, Opal should be affected by this as well since it uses formatted_subject!

This is actually a custom style based on Opal. It does not use formatted_subject.

It shows up in my (custom) layout. I just checked, and I check for the subject by doing if ($e.subject).
