There are two ways to make a pattern. You can drape muslin or you can flat pattern make.

Although draping is more fun, what type of garment you are making will ultimately decide what method you use.
Complicated, very dimensional designs usually require draping. It's too hard to tell exactly how the fabric will lay for flat pattern making.
Things that are more flat and fitted, like suits, are best for flat patternmaking.
Though if you're an expert you can really use either exclusively.

...Flat fitting seems harder -- to have to lay it all out and cut things there and then piece it together.

It all depends on you. How people think and how they can break it down. It's all about shapes. People who liked geometry tend to like it better.

It's easier to size grade too. Or when you have to make more than one gown.
