Quick bread update...

The regular loaf of white bread turned out okay.  I should have followed my 1st instinct and moved the oven rack down further (stupid electric oven...).  The second loaf, I decided should be a cinnamon bread.  It turned out yummy, but kinda trashed the oven (and pan) with melted cinnamon/sugar gunk.  Apparently, I used WAY too much.  It would have ( Read more... )

My trick (after ages trying) for good cinnamon rolls is an egg-heavy dough similar to a challah - soft white flour, eggs, butter, almost like cake but with yeast. Anything in the brioche family works. A couple of rises. Then roll, fill, and shape, and bake in a glass pie plate with the rolls touching each other after they've risen again. When they come out, brush the tops with milk (or butter or... well, probably lots of things would work) and cover with a towel or sheet of plastic to trap the steam.

It's that last step that keeps the crust from getting crunchy. :)
