looks absolutely delicious. i don't tolerate wheat very well either, but i think avoiding gluten entirely made me incredibly sensitive to it, and i gradually incorporated a moderate amount back into my diet.
I just want to skip the huge amount of gas I get from time to time! That's why I avoid pasta and bulgur too. Though, I don't think it is gluten in my case that is the criminal. I eat other grains which contains gluten like rye and spelt. It must have to do with the starch since polysaccharides who haven't been well digested early tend to give you gas.
