I am so glad to hear that you're having tests done and that you're possibly not at as great a risk as you thought! Also, keep feeling better, dude. AND HOW GOOD IS RICCOTA?! I knew there had to be a reason you were dissing my people's food (note my obvious Italian ancestry ;) ) - and that was because you didn't KNOW it!

It's pretty good! I don't know what to do with it though, so instruct away. Most of the things I've seen done with it are desserts, I don't want that persay... I just smeared it on an english wheat muffin with some roasted red pepper and it was pretty nifty, but if you have any suggestions, send em my way!
