Banana Loaf Cake II

"This recipe makes 2 loaves - have one now and
freeze one for later. It's very moist and tasty." Original recipe
yield: 2 - 8x4 inch loaves.
INGREDIENTS:
* 1 (18.25 ounce) package yellow cake mix
* 1 (3.5 ounce) package instant banana pudding mix
* 1/2 cup mashed banana
* 4 eggs
* 1 cup water
* 1/4 cup vegetable oil
* 1/2 cup chopped walnuts
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x4 inch loaf pans.
2. In a medium bowl, stir together the cake mix and
instant pudding. Add the eggs, oil, water and mashed banana, mix with
an electric mixer until smooth. Fold in the chopped nuts. Pour evenly
into the prepared pans.
3. Bake for 50 to 55 minutes in the preheated oven, until
a toothpick inserted comes out clean. Cool in pans for 15 minutes
before removing to cool completely on wire racks.
Southern Banana Pudding

"Delight your family tonight with this scrumptious
dessert from Kraft." Original recipe yield: 8 servings.
INGREDIENTS:
* 2 cups cold milk
* 1 pkg. (4 serving size) JELL-O Banana Cream Flavor Instant Pudding & Pie Filling
* 1 (8 ounce) container COOL WHIP Whipped Topping , thawed
* 30 vanilla wafer cookies
* 3 bananas, sliced
DIRECTIONS:
1. Pour milk into large bowl. Add pudding mix. Beat with
wire whisk 2 minutes. Let stand 3 minutes. Gently stir in 1-1/2 cups
whipped topping.
2. Place 10 of the cookies on bottom of 2-quart serving
bowl. Top with 1/3 of the bananas and 1/3 of the pudding mixture.
Repeat layers ending with pudding mixture. Cover with remaining whipped
topping.
3. Refrigerate until ready to serve.
Banana Pudding Cake

"This cake is a very moist banana cake that travels
well to pot lucks or picnics. It can also be baked in a 9x13 pan or an
angel food cake pan. It is a family favorite." Original recipe
yield: 1 - 10 inch Bundt cake.
INGREDIENTS:
* 1 (18.25 ounce) package yellow cake mix
* 1 (3.5 ounce) package instant banana pudding mix
* 4 eggs
* 1 cup water
* 1/4 cup vegetable oil
* 3/4 cup mashed bananas

* 2 cups confectioners' sugar
* 2 tablespoons milk
* 1 dash vanilla extract
* 1/2 cup chopped walnuts (optional)
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
2. In a large bowl, stir together cake mix and pudding
mix. Make a well in the center and pour in eggs, water, oil and mashed
banana. Beat on low speed until blended. Scrape bowl, and beat 4
minutes on medium speed. Pour batter into prepared pan.
3. Bake in a preheated oven for 50 to 55 minutes, or until
cake tests done. Let cool in pan for 10 minutes, then turn out onto a
wire rack and cool completely.
4. To make glaze: In a small bowl, combine confectioners'
sugar, milk and vanilla. Whisk until smooth and of a drizzling
consistency. When cake is cooled, drizzle icing over cake with a zigzag
motion. Sprinkle chopped nuts over wet icing if desired.
Banana Drops

"A fruity cookie that melts in your mouth. For those
who love bananas, you can replace the vanilla extract with more banana
extract." Original recipe yield: 5 dozen.
INGREDIENTS:
* 2 1/2 cups all-purpose flour
* 1/4 teaspoon baking soda
* 1/4 teaspoon salt
* 7/8 cup brown sugar
* 1/4 teaspoon ground cinnamon
* 1/2 cup butter
* 1/4 teaspoon vanilla extract
* 1/4 teaspoon banana extract
* 2 eggs
* 3 ripe bananas, mashed
* 1/3 cup chopped walnuts, toasted
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with parchment paper.
2. In a medium size mixing bowl, sift together flour,
baking soda and salt. In a separate small bowl, combine 2 tablespoons
brown sugar with cinnamon, set aside.
3. In a medium size mixing bowl, beat together 3/4 cup
brown sugar with the butter or margarine, vanilla and banana extract
until the mixture is light in texture. Beat in the eggs. Mix in the
banana. Slowly mix the flour mixture into the egg, banana and sugar
mixture. Fold in nuts. Drop the dough by teaspoonful onto the prepared
cookie sheet. Sprinkle the cookies with the mixture of brown sugar and
cinnamon prepared earlier.
4. Bake 8 to 10 minutes, until lightly browned.
Banana Bars

INGREDIENTS:
* 1/2 cup shortening
* 1 cup white sugar
* 1/2 cup milk
* 1 teaspoon vanilla extract
* 1 1/2 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 very ripe banana, mashed
* 1 teaspoon lemon juice
* 1/2 cup chopped walnuts
*
* 2 tablespoons butter, melted
* 1 teaspoon vanilla extract
* 2 cups confectioners' sugar
* 1/2 ripe banana
* 1/2 teaspoon salt
* 1/4 teaspoon lemon juice
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
2. In a large bowl, cream together the shortening and
sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine
the flour, baking soda and 1/2 teaspoon salt; stir into the sugar
mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread
evenly into the prepared pan.
3. Bake for 25 to 30 minutes in the preheated oven, until
a toothpick inserted into the center comes out clean. Let bars cool in
the pan on a wire rack.
4. To make the frosting: In a medium bowl, mix together
the melted butter, 1 teaspoon vanilla, confectioners' sugar, 1/2
banana, 1/2 teaspoon of salt and 1/4 teaspoon lemon juice using an
electric mixer. Beat until smooth. Spread over cooled bars and then cut
into squares.
