What is wrong with me? I honestly think I must be totally bipolar when it comes to Mike. I just don't get it... I feel like I can't live without him, but I KNOW he is just NOT the one for me

Interesting. Well, I have to say this honestly, I see one of two things happening: A) Your relationship hits the rocks and you inevitably break up (could be six months or six years) or B) You get married, indefinitely engaged, or something similar. Using your own judgement, assess which is more realistic and likely to happen.
Eventually, one of these two will probably happen, even if you stay stuck in the cycle you're talking about above. And if you do stay in that cycle, it may be the second choice. You know as well as I do that you're making a choice when you make no choice at all.
Generally, when I notice someone talking about a long-term relationship where sex is great but conversation and other things aren't, my spidey sense goes off. Of course, that's not really something I'll comment about, considering that's not really something I can judge for you.
