this reminds me of adaptation, when nicholas cage's character wants to write a story where nothing really happens. it doesn't sound like a horrible idea.

yeah... undermining and sidestepping the conventions is very adventurous, genius, and groundbreaking when you pull it off -- but it's also just plain dumb and amateurish when you don't, which is most of the time.

or even movies that don't really seem to be about anything, or where nothing SEEMS to happen still pretty much follow this structure. it's just either too subtle for you to notice, or does it in a way that's fresh and original that you're not sitting there counting the plot points as they happen.

people either love or hate these movies and both sides will claim they have no plot (i.e. Napolean Dynamite, anything Cassavettes) but they most definitely do. It's just not spelled out as obviously as most mainstream flicks.
