tuna fish salad is always good, throw in diced cucumbers and tomatoes, with a bit of mustard and spices, if you're eating at home, you can throw in mayonaise, but I make do with just a touch of olive oil. Can eat with crackers/bread/whatever.
Otherwise I generally go with leftovers, or rice crackers and cheese, or something thats really yummy. Peanut butter, banana and honey sandwiches, (substitute choice of fruit and fruit spread for honey). David's favorite sandwhich is avocado, hummus and cheese on raisin bread, although that can get expensive, and isn't so kid appropriate.
