Well, I got it into my head that I wanted to make some homemade gifts this year. I decided that I wanted to make herb-infused oils to go with vinegar for salad or to bake french fries in or dip bread in, etc. It is really not that hard but it is a bit of a time consuming process. When jamming, if the seals don't take, the jam is still good it just only last for up to a year. If the seal takes well it's good for as long as you want it to an extent.

Not sure if that holds true to herb infused oils though.
